When I output an FBX and open it in TouchDesigner the mesh is still visible (chunky). Any way I can change this ?

Hello,
The mesh is still chunky because that's how the mesh is actually formed as. It is the textures that need to be transparent which result in the shape being smooth.
The texture exported out by the FBX export is just the texture you fed into your character. In game engines like Unity and UE4, you have to set the relevant shaders/materials for transparency in order for the character to show up properly.
In the tool that you are using, it will need to support transparent textures or make its shaders aware of the alpha channel of the textures, otherwise the display will be off.
